What "Lab-Tested Mold-Free" Means

Coffee is an agricultural product. Like any crop, it passes through growing, harvesting, drying, storage, and shipping - each a stage where moisture and time can allow mold to develop. Testing is how a roaster establishes what is actually present in the coffee, rather than what is assumed.

When Café Nairobi describes its coffee as lab-tested mold-free, that phrase refers to a specific documented outcome: an independent laboratory measured the coffee for mold and yeast, and the result came back at 0 CFU/g.

Who Tests Our Coffee

Café Nairobi coffee is analyzed by Cambium Analytica, an independent laboratory accredited to ISO/IEC 17025:2017 (Accreditation #108157). ISO/IEC 17025 is the international standard for testing and calibration laboratories - accreditation to it means the lab's methods, equipment, and personnel have been assessed by an external body as technically competent.

Cambium Analytica has no commercial interest in the outcome of the analysis. That independence is what makes the result meaningful.

What the Coffee Is Tested For

The Certificate of Analysis covers several separate panels:

Panel What it measures
Total Yeast & Mold Live yeast and mold colonies present in the sample, measured in CFU/g
Aflatoxins Aflatoxin B1, B2, G1, G2, and Ochratoxin A — mycotoxins that can be produced by certain molds
Pesticides A broad USP <561> pesticide panel, by both GC/TQ and LC/TQ methods
Heavy Metals Arsenic, cadmium, lead, and mercury
Total Aerobic Bacteria General microbial count

Reading the Results

Two terms appear throughout a Certificate of Analysis and are worth understanding:

CFU/g stands for colony-forming units per gram - a count of viable organisms in a sample. A result of 0 CFU/g means no colonies were detected at the laboratory's limit of detection.

ND stands for "not detected" - the analyte was not found at or above the laboratory's detection limit. Every detection limit is printed on the report itself, which is why reading the full document matters more than reading a summary of it.

In the results reviewed, total yeast and mold were reported at 0 CFU/g, and the tested aflatoxins were not detected.
